Ask the Chef: Big Green Egg

We started the Ask the Chef feature to give our guests the opportunity to ask advice on cooking conundrums, recipe tricks, and other culinary challenges that pop up in the kitchen. Today, David gets the goods on the Big Green Egg.

 

Q: What do you cook on your big green egg?

 

A: We cook just about anything on the big green egg, from burgers and steaks to flatbreads and pizzas. If you’ve taken the plunge and purchased a green egg, you’re going to absolutely love it and I encourage you to start experimenting with the numerous cooking techniques that are available, specifically braising, grilling, and smoking. Once you’ve perfected your techniques (and practice makes perfect), you can start to experiment with some really off the wall cooking.

 

We’ve done Ted Reader’s famous Roll in the Hay Steaks on the Egg and we were blown away by the amazing flavours. We also had great success with steamed mussels and grilled flatbread. Read the article with my recipe for Mildred’s Curry Saffron Mussels here (page 30-31).
